No diet will work if we feel deprived so we need to treat our selves every once and a while. When changing our eating habits we need to keep some normalcy. I’ve reworked some dessert recipes to a low carb, version. Making simple substitutes can have a major effect on the carb count of a recipe. So check this one out.
- 1 and a half lbs cream cheese (room temperature)
- 4 eggs
- 1 and 1/2 teaspoon vanilla
- 1 and 1/2 teaspoon lemon juice
- 1 and 1/3 cups worth of artificial sweetener
Crust:
- 1 cup almond meal
- 2 tablespoons of melted butter
- 2 tablespoons of artificial sweetener
PREPARATION:
Pre heat the oven to 375 F.
1. Mix the ingredients for the crust, and press into the bottom of a baking pan. Bake the curst for 8-10 minutes, until it beginnings to brown.
2. In a mixing bowl beat the cream sheese till its fluffy. Incorparate the other ingredients, fully incorporating each ingredient. When the rest of ingredients are mix in pour mixture into pan over crust.
After putting the cheesecake in the oven turn the heat down to 200. Bake for 60-90 minutes. Start check it at about 1 hour after it was put in. The cheese cake is down when it is firm to touch but slightly soft near the middle.
Place it in the refrigarator and Chill completely. Add the low sugar fruit of your choise
